Green Eggs no ham

The cold elements of winter have finally left the air and for me the smell of spring makes me want to start eating healthy again which = greens, and lots of them. So many people seem to think that veggies have no place at the breakfast table but they couldn't be more wrong. By loading yourself with veggies first thing in the morning you start the day with all the vitamins you need. Plus veggies make you feel fuller for longer combined with proteins and complex carbs.

I made up this little concoction inspired by one of my favourite breakfast places, but I like mine better (no bias in there at all) :)


  • 4 tblsp Spinach brown rice risotto
  • 2 tsp grated parmesan
  • 1 bunch mini asparagus
  • 1 handful coriander
  • 1 bunch broccolini
  • ​pine kernels
  • 1 clove garlic crushed
  • chilli flakes
  • 1 egg
  • salt and pepper to taste

Chop the broccolini and asparagus into small pieces. Fry in a small pan on medium high with the garlic, some olive oil and the chilli flakes (as much as your tongue permits) for 3 minutes. Add the coriander and mix off the heat.

Take out of the pan and place on a plate next to the spinach brown rice risotto.

In the same pan fry one egg, throw some salt and pepper and some of the parmesan onto the egg while its frying. On the empty side of the pan roast the pine kernels

Put the egg onto the plate and throw the pine kernels all around. Throw the rest of the parmesan onto the risotto and voila!

So very yum!
