Chicken Flaxseed Muffins (Gluten and Wheat Free)

• 450g ground chicken breast meat / mince
• ½ cup ground flaxseed
• 3 tbsp grated Parmesan
• 3 sprigs fresh rosemary, minced
• 3 cloves garlic, crushed
• 1 large sweet potato, quartered and cooked
• 1 egg, beaten
• ¼ tsp coarse salt
• Cooking spray

Preheat oven to 190 centigrade. In a food processor (or with a hand blender) combine all ingredients and pulse until everything is well blended. If you don’t have a blender mash the potatoes with a fork and combine.

Spray and 12 muffin tin with cooking spray Evenly divide the mixture and bake for 30 minutes.

This is a great recipe, however it is not clear if the chicken or turkey should be pre-cooked prior to adding it to the other ingredients. Is this like making a meat loaf?

Hi Kymberly. Good point - the chicken / turkey is raw and cooks with everything else :)
