Chicken Flaxseed Muffins (Gluten and Wheat Free)
•450g ground chicken breast meet / mince
•½ cup ground flaxseed
•3 tbsp grated Parmesan
•3 sprigs fresh rosemary, minced
•3 cloves garlic, crushed
•1 large sweet potato, quartered and cooked
•1 egg, beaten
•¼ tsp coarse salt
Preheat oven to 190 centigrade. In a food processer (or with a hand blender) combine all ingredients and pulse until everything is well blended. If you don’t have a blender mash the potatoes with a fork and combine.
Spray and 12 muffin tin with cooking spray Evenly divide the mixture and bake for 30 minutes.
Although flaxseed contains all sorts of healthy components (may help fight everything from heart disease and diabetes to breast cancer), it owes its healthy reputation primarily to three ingredients:
Omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s.
Lignans, which have both plant estrogan and antioxidant qualities. Flaxseed contains 75-800 times more lignans than other plant foods.
Fiber. Flaxseed contains both the soluble and insoluble types.
